Margaret MacInnis, our in-house Winemaker, completed the coveted UC Davis Winemaking Certificate Program in March 2019. Through intensive study over 18 months, Margaret completed the program with stellar average.

Notes from Margaret

Course Modules

Introduction to Winemaking: This course is similar to WSET Level I, with the addition of more extensive study on wine and health, wine around the world, and a heavy emphasis on label interpretation.

Viticulture: This module focused on a mock design and planting of a grape vineyard, supporting it through Year 4. Many of the topics are basic to all plant growth. For example, we’ve implemented a more stringent program of tissue testing instead of soil testing twice per year. We have the ability to interpret the results and apply amendments as required. The course also discussed the issue of diseases and pests. Although Haskap, Rhubarb and Black Currants do not have the same problems as grape vines do, the unique methods of control for their issues are easily extrapolated.

Wine Production: Although the information was grape-centric, the principles of wine production apply to all fermentation; therefore, this knowledge will be useful to our winery.

Wine Stability and Sensory Analysis: This was the most intense and difficult module. Several weeks of 80+ hours and concurrent study in Organic Chemistry resulted in an A+ grade. Sensory analysis was interesting and informative.

Quality Control and Analysis: Prerequisites for this module included Biology and university-level Chemistry. To ensure success, Introductory Chemistry 101 was reviewed. The information in this module provided competency to design and stock a laboratory, as well as the knowledge to create and implement a Sanitation Protocol.
