The rows were designed to accommodate the width of the equipment. Half of the bush is “picked” by the harvester at a time. Manual sorting takes place at that time to ensure all leaves and other debris is removed from the trays. The trays are stacked and moved to the transport trailer. These will be used solely for wine. The second followup harvest resulted in 1,250 pounds harvested in one day. This batch was sold or traded. The produce was transported via the mobile chiller to a winter freezer at a local facility near Big River, Saskatchewan. As soon as the manufacturer license is finalized, our Winemaker will initiate the fermentation process. It is expected that the 5,200 lbs of berries will produce over 6,200 bottles of Haskap fruit wine. It was then trailered to Debden. It was a steep learning curve for both operator at the tractor and sorters at the conveyor belt on the machine. Luckily, we purchased a dedicated orchard tractor, the New Holland 2012 Boomer 8N, which has creeper gears and is very adaptable to using with this style of pull-behind harvester. We had 160 berry trays available, and each held about 7 pounds, so we could harvest approximately 1,000 pounds in several hours. The trays cannot be filled too deeply, as Haskap are easily crushed. The process was then repeated. The sample was clean, had no evidence of negative odour, observed to be somewhat cloudy due to unsettled yeast; with the addition some sugar, tasted pleasing for an immature unaged, unfiltered and unsettled wine just finished fermenting to dryness. The astringency/acid/alcohol balances are very good. I am currently doing some smaller carboy testing to determine if this wine could benefit from a little addition of oak chips. Weight 360 g: Brix was 12.5, pH 3.0, pH and TA more acidic still; the decision was made to wait 3 more days and test again as the Brix was not ideal, and the product still a little acidic and tart for wine, although these kinds of berries make excellent jam and toppings! One procedure we follow when testing berries for ripeness is cutting them open and looking for solid red/indigo colour throughout plus assessment of the seed maturity. This sample has a Brix of 14 and is indicative of being nearly ready for harvest. The taste is optimal and the colour of the cut berry is also uniformly ripe. The seeds are starting to look ripe as well. The Brix of each sample is checked, along with other parameters to determine suitable harvest time. During the lab assessment, the dilution ratio of each sample to provide optimal product to ferment is established. For example, this sample was diluted 35% Brix 14.2 juice, with 65% Brix 26 water (sugar added) and the pH, TA, and taste/aroma were determined to be optimal. The short answer is because they can. Don’t for a second think that yeast have brains and that they are producing alcohol for our benefit! The truth of the matter is, the ethanol is a byproduct of a food system that allows yeast to grow, make energy and reproduce. Yeast belong to the Fungus Kingdom. They are a single cell and generally reproduce by budding. During their life processes, they basically spit out ethanol and carbon dioxide as they process their “food”, which is sugar. The series of reactions are chemical ones. His main role was to transport the Haskap berries from the orchard to the processing station. Shane assisted with time-sensitive processing tasks required to freeze all berries before transporting them on pallets to a commercial freezer in Saskatoon. Shane was an asset in helping Collin position and fasten the decorative siding to the front and back walls of the winery. Shane has his Professional Cooking Diploma; he is currently enrolled in the Butchery and Charcuterie Management program at SAIT.
